Easy-Peasy Strawberry Shortcake with Yummy Biscuits

Makes 9 portions.



Ingredients:

1 Quart Sliced and Sugared Strawberries

½ Cup and 2 Tablespoons Granulated Sugar

1 Pint Heavy Whipping Cream

1 Tablespoon Vanilla

1 Cup Unsalted Butter

4-1/2 Cups Baking Mix (such as Bisquick)

1 Cup Lemon-Lime Soda (such as 7-Up)

1 Cup Sour Cream








Directions:


  • Wash, clean and slice the strawberries and put them in a bowl.

  • Sprinkle ½ cup granulated sugar over the berries and set aside for at least 2 hour.

  • Pour heavy cream in bowl and beat at high speed with an electric mixer.

  • Once the cream begins to thicken, sprinkle in ½ cup granulated sugar and vanilla.

  • Continue to beat until soft peaks form. Cover with plastic wrap and refrigerate.

  • Preheat oven to 425 degrees.

  • Put ½ cup butter in a 9” round or square baking pan and place dish in the preheating oven until butter is melted.

  • Mix baking mix, lemon-lime soda and sour cream together in a bowl until dough holds together and is sticky.

  • Turn dough onto a floured work surface and roll dough in flour.

  • Make nine balls of dough, lightly covered with flour, and place them in the pan with melted butter.

  • Bake in the preheated oven until biscuits are golden brown, 10 to 12 minutes.

  • Remove dish from oven and melt ½-cup butter in microwave.

  • Brush butter over top of biscuits while warm.

  • Slice biscuits in half horizontally and place on serving plate.

  • Top biscuits with generous amount of sugared strawberries and juice.

  • Top strawberries with generous dollop of whipped cream.
